This Caramel Apple Coffee Cake is the perfect addition to a fall brunch! It is made with gluten free and wholesome almond and oat flours, and topped with a homemade Sea Salt Caramel Sauce.
My friend recently had a 2nd baby boy. I remember those days and weeks (and months!) after my son was born. It was such a precious time, but it was also a stretch of time that I ate very little that wasn’t directly from a package.
Taking the time to actually cook was out of the question!
Newborns keep you very, very busy, and very, very sleep deprived. I definitely ate my share of chocolate and fruit during those first few months– the sugar cravings were intense!
I decided to make a coffee cake because A). YUM! and B). It’s actually a great healthy option when you make it with fruit, whole grains, and a natural sweetener. I knew it would be the perfect way to make sure she got at least a few delicious breakfasts.
I made a gift basket, including this breakfast-worthy apple cake, and a small toy I had picked up for the baby. While I was shopping, I picked up some fresh fruit, orange juice, and a gerbera daisy plant to brighten up the package.

This cake uses the blanched almond flour and my other favorite- oat flour. Using these in place of wheat flour makes the cake gluten free, but also raises the protein and fiber content, making a more nutritious baked good.
Tips for Caramel Apple Coffee Cake
- Make it Gluten Free: Almond flour is naturally gluten free. Be sure to pick up Certified Gluten Free Oat Flour if necessary.
Caramel Apple Coffee Cake
This delicious apple studded coffee cake is made gluten free with wholesome almond and oat flours. To make this an extra special treat, I topped it with a Vegan Salted Caramel Sauce.
Sea Salt Caramel Sauce
Preheat oven to 350 degrees F.
Prepare a round, 9 inch cake can by spraying it liberally with coconut oil.
Add the flours, baking soda, sea salt, and cinnamon to a large mixing bowl, and mix together well.
In a small bowl, mix together yogurt, coconut oil, date syrup, and eggs.
Add wet ingredients to dry cake ingredients, and mix just until the dry ingredients are wet, without overmixing. Set aside.
Peel and slice apples, keeping them in a bowl of water with lemon juice to keep from browning.
In a small bowl, mix together the flours, brown sugar, and cinnamon for the crumb topping. Drizzle the coconut oil in, and mix until a crumb texture is reached. Set aside.
In the prepared cake pan, first layer the cake batter, then top with the sliced apples, pressing down slightly into the cake.
Top the cake and apples with the crumb topping.
Bake for 35-40 minutes, pressing down past the apples with a skewer or fork to check doneness in the center of the cake.
Top with caramel sauce when ready to serve.

I love using date syrup as a more natural sweetener in my baked goods. It was perfect for this recipe because it has a naturally caramelly flavor.
I have switched to using date syrup in place of honey is most of my recipes. It works as a 1-1 replacement, and is just a bit less sweet (which I prefer). I don’t like sugar or honey in my drinks, but I will use about 1/2 teaspoon of date syrup in home made almond milk lattes and love the natural sweetness it provides.
You can sometimes find it at health food stores like Whole Foods, but it is also available on Amazon.
